Respect for the Raw Material: Grapes

At Terre Bianche, we know that each grape variety possesses unique characteristics. Nero di Troia, Falanghina, Fiano, the bombino and other varieties are cultivated using specific techniques to enhance their distinctive qualities. Our approach is based on respecting and enhancing these differences, to ensure that each wine expresses the essence of its variety to the fullest.

Technological Precision in Production

We use stainless steel tanks for optimal temperature control during fermentation, essential for preserving the aromatic characteristics of the different grapes. We also adopt advanced techniques to protect the wine from oxygen, ensuring its freshness and purity until the moment of tasting.

The wood

Maturation in oak barrels is a crucial step in our production. These barrels not only enhance the structure and flavor of the wine, but also add complex and deep nuances, enhancing the quality of each variety.

In our wines Salacia and Cacc’e Mmitte, the passage in oak barrels plays a fundamental role. These containers impart sophisticated notes and aromatic complexity to the wines, harmoniously integrating the strength of the varietal character with the elegance of the wood.

For over 30 years, since I started as an oenologist, I have dreamed of having a winery where I could oversee every phase of the winemaking process, from grape to finished wine. Knowing that my son Fabio wishes to continue this profession is a source of immense pride for me. It's the continuation of a dream that lives on through generations.
